Mexican Rice Bowl

This weekend I went to visit a friend for her birthday. And man did it feel good to get out of town.

It will full of manicures and ice cream, 90’s movies and girl talk. It was just what I needed.

Now that I am back in the rush of grad school life, the recipes are quick and easy. Ain’t nobody got time for crazy recipes that take an hour for prep and an hour to bake + a million ingredients. Ain’t nooo–body got time for that.

Except if it’s worth it or if it’s the weekend or something like that. But it’s not the weekend. It’s a Tuesday. And I’m sending an easy recipe your way.

Mexican Rice Bowl

1/2 c brown rice
1/4 c broccoli slaw
2 mini bell peppers (or 1/2 regular bell pepper), sliced or chopped
1/4 avocado, sliced
3 tbsp salsa (or just a big dollop)
2 tbsp plain Greek yogurt (or just a normal sized dollop)
3 tbsp cilantro, roughly chopped
3 tbsp lime juice
3 tbsp shredded Mexican cheese

1. Cook rice according to directions.
2. Combine remaining ingredients.
3. If desired, microwave for 30-60 seconds to melt the cheese slightly.

Mexican Style Spinach Salad

Today is about you. No mess, no fuss, just some simple salad ingredients.

spinach | tomatoes | bell peppers | brown rice | pineapple salsa | garlic pepper | cumin | olive oil | lime juice

Pineapple Mango Tacos

We are going full fledge summer here.

Pineapple and mangoes are all the rage. They’re the epitome of summer. Fresh, light, fruity and delicious. And we all know feta is a wonder food.

And don’t even get me started on cilantro. I wish I had a massive garden, filled with cilantro. And corn. And kale. And berries. Berries…. can they grow in gardens? Let’s make that happen.

Let’s also make these tacos happen.

Pineapple Mango Tacos

Flour tortillas
Mango
Pineapple
Green bell pepper
Red onions
Feta
Cilantro

1. No specifics. Use as much or little as you like and make for as many or few people as needed.
2. Combine all in tortillas.

Mexican Fiesta Salad

I’ve started on this “Super Healthy Kaylie” thing until graduation.

And let me just tell you – working at a frozen yogurt shop makes that very difficult. Between the Reese cups, cookie dough, cake batter yogurt, and hot fudge, it is all I can do to not stuff my face.

But. I am testing my will power. Which I didn’t think I had much of, but apparently I do. Win.

This mexican fiesta salad totally falls under this healthy thing. And? It tastes amazing. Hello, lunch for the rest of week.

PS: I’m pretty sure this needs to be in my closet. ASAP. Now, I already have too many clothes, but maybe if they made this in a workout tank top? Wouldn’t that be cute???

Mexican Fiesta Salad

Adapted slightly from Vegetarian Times

1 c mixed lettuce

1/2 avocado, chopped

1/4 c tomato, chopped

3 tbsp c corn

2 tbsp red onion, finely chopped

3 tbsp orange bell pepper, chopped

2-3 tbsp cilantro, finely chopped

2 tbsp plain Greek yogurt

2 tbsp salsa

Shredded cheddar cheese

1. Combine all.
